Protein Rich French Toast

Whether you fancy something sweet for a post-workout meal or a protein packed breakfast that feels like you're eating desert, give this French toast a go! It's easy to whip up so it's also perfect if you're hangery or pushed for time. Check out the recipe below!

Approx macros: 24g carbs, 6g fat, 38g protein
Ingredients:
1 slice of wholemeal bread
1 egg
A few drops of vanilla essence
125g 0% fat Greek Yoghurt
20g whey protein (I used QNT light digest in coconut flavour)
sugar free maple syrup (I used Bulk Powders)
A few squirts of fry light coconut oil (you can use any light oil spray)
Method:
1. Beat the egg in a shallow dish with a few drops of vanilla essence.
2. Place the bread in the egg batter and ensure both sides have soaked up as much egg as possible.
3. Heat the oil in a non-stick frying pan and when heated add the bread. At this stage you can pour any left over egg on top of the bread whilst it's frying.
4. Whilst the bread in cooking, thoroughly mix together the whey and greek yoghurt and set aside.
5. Remember to flip the bread so that it is cooked and golden on both sides.
6. Whilst still hot, place the toast on a plate, top with the protein yoghurt mix and drizzle on the sugar free syrup.
7. Enjoy.
The syrup is optional, if you don't want the syrup but still have a sweet tooth then you could always sprinkle on a little stevia.
You can also mix up this recipe by adding a nut butter and some chopped banana instead of the yoghurt or even add a lactose free yoghurt if you're sensitive to dairy, however this will change the macros.
