Blueberry and Lemon Cheesecake Pudding

When it comes to indulgent puddings and deserts, I believe that there is nothing wrong in having the real deal every so often but...everyday can cause a problem. Mainly because they aren't entirely nutritious and they can take up a huge amount of your daily calorie needs.

So, I have come up with a recipe that provides similar textures and flavours of a cheesecake that can be enjoyed most days (or every day) due to the calorie and macro content.

Ingredients:

- 1 Sugar Free Gullon Digestive Biscuit

- 100g 0% Fat Greek Yoghurt

- 30g Scitec Nutrition Whey in Lemon Cheesecake flavour

- 40g Blueberries

- Pinch of stevia (optional)

Method

- Blend or crush the digestive biscuit and place in serving bowl/cup/whatever you fancy.

- Mix the 0% fat Greek yoghurt with the lemon cheesecake whey and pour on top of the biscuit base.

- Microwave the blueberries for 1min and stir in a pinch of sweetener (depending on the sharpness of the blueberries).

- Pour the gooey blueberries on hot or leave to cool before doing so.

- Allow to set in the fridge a little or enjoy straight away!

APPROX CALS & MACROS: 277cals, 22g carbs, 5g fat, 36g protein.
